A FUN + EASY WEEKDAY DINNER

If your kids aren’t already back at school, it’s probably only a matter of days before they are. And with back to school and the change up of routines, comes all sorts of busyness, which can affect everything! Just last year, my son started preschool and I did not expect it to be a huge adjustment for the entire family, but it was. And it was just preschool! I imagine the stress and busyness is only magnified when we are talking about older ages and multiple kids.
 

If you follow me over on my Instagram feed, @lunchesandlittles, you know that I love to make meals fun, but I also like to keep things easy; especially this time of year. So, I am going to share with you a fun and easy dinner, perfect for a school day! It is easy, totally kid-approved and F-U-N! And, will definitely be on our mealtime rotation!

 

EASY CHEESEBURGER MUFFINS (MAKES 12)

INGREDIENTS

+ For your burger mixture: 1 lb lean ground beef, 1 onion, 2-3 garlic cloves, 2 tbsp Worcestershire sauce, 1 tsp garlic salt, 1/2 tsp season salt and 1/2 cup chedder cheese. For your baking mixture: 1/2 cup Bisquick brand mix (or comparable), 1/2 cup milk and 2 large eggs. For the burger toppings: tomato, mini kosher dill pickles, ketchup, mustard, etc.

 

 

DIRECTIONS:

+ Preheat oven to 375°F. Then, prepare a (12 well) muffin tin by lightly spraying with cooking spray. Set aside.

+ Prep food: Chop onion, dice tomato, mince garlic, and measure out all other ingredients, if you haven’t done so already. Set everything off to the side.

+ Cook meat and prepare burger mixture: Cook your ground beef, onion, and garlic in a large skillet over medium-high heat approx. 5-7 minutes, stirring as you go, until thoroughly cooked. Then drain. Cool a few minutes, then transfer to a medium mixing dish and stir in Worcestershire sauce, garlic salt, season salt and shredded cheese. Mix until well combined. Set aside.

+ In a separate mixing bowl whisk together the Bisquick mix, milk and eggs. Whisk until well combined, then set aside.

 

 

+ Prepare muffins: In your prepared muffin tin, spoon approx. 1 tbsp. of your baking mixture into each well. Next, pour 1/4 cup or so of the meat mixture on top of the baking mixture. Top off each with another tbsp. of the baking mixture, until you have used all of your mixtures up.

+ Cook muffins: Cook muffins in oven for 22-27 minutes (depending on how your oven cooks; just keep an eye on them!) until lightly browned on tops and cooked through (inset a toothpick to check!)

 

 

+ Finish up: Allow muffins to cool a few minutes in the muffin tin, then carefully remove and set on a cooling rach for another few minutes. Then, top with garnishes of choice and serve. Perfect with a side of baked sweet potatoes, etc. Can also be used as an appetizer for a family party, etc. These muffins freeze like a dream and can be easily stored for quick snacks! Flavorful, easy and F-U-N!
