We all know that Hallowen and candy kind of go hand in hand, but the Halloween fun doesn't have to begin and end with sugary sweets. Even Halloween food can be fun and healthy. All this month over on my feed, I've been sharing some festive ideas that are both parent AND kid-approved: Turkey Stuffed Pumpkin Peppers, Pumpkin Spice Pancakes, Zombie Brains Macaroni and Cheese, and more! And today, I am sharing another family-friendly Halloween meal idea right hear: Mini Mummy Meat Loaves!
These cute little meatloaf muffins are easy to make, healthy and add just the right amount of spook to your (and your kid's) plates! Even better, this is an easy recipe your little goblins can help you make. See below for full details.
MINI MUMMY MEAT LOAVES (MAKES 12)
+ For your meat loaves: 1 lb. lean ground beef* (we use PRE brands), 2 eggs, 2 tbsp ketchup (we make our own; recipe here), 2 tsp Worcestershire sauce, 3/4 cup panko, 1-2 carrots (shredded), 3-5 garlic cloves, depending on size and taste preference, (minced), 1 onion* (small diced) and 1/2 tsp salt and 1/4 tsp pepper. *Onion is optional
+ You will also need: Mashed potatoes (you can use a quick boxed mix, or homemade) and peas – for the eyes (and for a side!)
+ Preheat oven to 375°F. Then, prepare a (12 well) muffin tin by inserting liners into wells. Set aside.
+ Prep all necessary food as described in ingredient list: Shred carrots, mince garlic and dice onion (if desired).
+ Combine ingredients to make meat mixture: In a medium to large size bowl, combine your eggs, ketchup, Worcester sauce, salt and pepper. Next, stir in panko. Add garlic, carrot and onion (again, only if desired). The, add in your ground beef and mix until just combined (we got a little out of order on this and it was fine; so no worries if your kiddo combines these things out of order!)
+ Divide up and cook: Divide meat mixture between the 12 wells of your pan. Then, transfer to your pre-heated oven. Cook approximately 15-20 minutes, or until beef is cooked through.
+ Make mashed potatoes and peas: While your meat cooks, make mashed potatoes and peas. You can make mashed potatoes like you usually would (a homemade recipe), or can just use a boxed mix. We used a boxed mix for these, and a quick, frozen bag of peas. Once potatoes are done, scoop into a plastic bag and then snip the end of the bag, so that it resembles a pastry bag. Place cooked peas in a serving bowl. Set both aside.
+ Finish up your mummies: Once your muffins are done, remove from oven and allow to slightly cool. Then using your potatoes in bag (see above) “pipe” potatoes back and forth across the top of each of your muffins, until design resembles a mummy. Finish off my placing 2 peas for each of the eyes. Serve mummy meat loaves with remaining peas as a side, and an additional side if desired.
Serve these fun mini meat loaves up as part of a fun week-of-Halloween dinner, or a quick dinner for Halloween night. You could even make up a double (or triple!) batch for a Halloween party. These are sure to be a family and/ or crowd-pleaser. They are easy to make and kiddos love them! And, you will love that they are a fun Halloween option that isn’t full of sugar!
